Curanto

In Patagonia, savor a typical food of the region, made with art and ancestral techniques.

Have you ever tried curanto? Discover this traditional dish, originally Araucanian. Preparing it is quite a ritual. Come see how the cooks dig a hole in the ground and cover it with red-hot stones heated on a fire pit. On the stones, they spread nalca or maqui leaves (giant wild rhubarb). Over them, they place the ingredients: various types of meat and vegetables.

The ceremony continues: the cooks cover the ingredients with humid linen cloths, then cover the linen cloths with a layer of leaves and finally with abundant earth. Thus, they form a natural oven where food is cooked in the heat of the stones. Would you like to watch the ceremony and enjoy this delicacy? On Sundays, come to Colonia Suiza.
